Vegan Chocolate Fudge Cake

Few things in life give us the same pleasure that a slice of chocolate cake does. Particularly a nice, gooey, fudgey chocolate cake that gives over 13g protein per slice and is entirely plant-based!


Made with our newest vegan protein flavour, Pea Protein Cocoa Orange Zest, this vegan Chocolate Fudge Cake has a rich and zesty flavour that makes it a real crowd-pleaser. Being plant-based, it also suits a range of diets.


Fudge Cake Ingredients


For the base


1/2 cup all purpose baking flour


½ cup almond flour


1 cup cocoa powder


½ scoop Pea Protein Cocoa and Orange zest


1 tbsp baking flour


2-3tbsp natural sweetener*


1 tsp vanilla extract


2 cups almond milk


*I used erythritol, but feel free to use anything else (stevia, maple/agave syrup or sugar)


 


For the chocolate frosting


1 scoop Pea Protein Cocoa and Orange Zest


1/3 dairy free butter


1 cup cocoa powder


1 tsp vanilla extract


3tbsp maple syrup


1 cup almond milk


 


For the coconut cream


150ml thick coconut cream


30g chopped dark chocolate


3tbsp maple syrup


 


Fudge Cake Method



  1. Put all the base ingredients in a food processor and whizz them up.

  2. Pour equal amounts of the mixture into 2 greased cake tins.

  3. Bake them both for 30-40 minutes at 170℃.

  4. Put all the chocolate frosting ingredients in a food processor and mix until smooth, creamy.

  5. Mix thick coconut cream with chopped dark chocolate and maple syrup until well combined.

  6. Take the cakes out of the oven & allow them to cool down to room temperature.

  7. Put half of the thick layer of the frosting on the top of one of the cakes and spread the coconut cream layer on the top of the chocolate cream.

  8. Put the other cake on top.

  9. Cover the entire cake with the rest of the frosting.

  10. Place in the fridge to set for about 1 hour. Slice it up! Enjoy!
