Turmeric Protein Bounty

When you’re out and about it can be easy to give into temptation and pick up a chocolate bar but, if you want a health(ier!) take on a classic, try our Tumeric Protein Bounty recipe!


Made with our tasty pea protein it’s suitable for vegan, dairy-free and gluten-free diets!*

Ingredients


For the turmeric layer


250g mixed seeds


50g almonds


1 sachet/scoop of Pea Protein Classic Vanilla


1 tsp maca powder


½ tsp ginger powder


½ tsp cinnamon powder


2 tsp turmeric powder


30 ml coconut oil, melted


50 ml agave syrup


60 ml water  


 


For the coconut layer


½ cup ground almonds


2 cups shredded coconut


30 ml cacao butter or oil, melted


40 ml monk fruit sweetener (or other natural sweetener)


1/3 cup of almond milk  


 


Topping -


Melted chocolate mix (mix unsweetened cocoa powder, coconut oil and agave syrup)

Protein Bounty Method


To make the turmeric layer



  1. Put half the mixed seed mix (125g) into a food processor along with the almonds and blend into a flour.

  2. Transfer the flour mixture into a bowl and then add the remaining mixed seeds, pea protein, maca powder, turmeric, ginger, cinnamon, agave syrup, coconut oil and water.

  3. Mix the ingredients until they all start to bind together.


For the coconut layer



  1. Add all the coconut layer ingredients to a bowl and mix until it starts to bind together.


To assemble



  1. Press the turmeric layer dough into a square/rectangle cake box.

  2. Remove the layer from the box whilst retaining its shape and repeat the process with the coconut layer.

  3. Place the turmeric layer on top of the coconut layer.

  4. Spread the melted chocolate mixture on top.

  5. Place into the freezer for at least an hour.

  6. Take out of the freezer and slice into squares. Enjoy!
