With minimal prep – but maximum gain, both in protein and taste! – it’s perfect for busy schedules where you still need something to power you through until lunch.


Acting as a natural pre-workout energiser, the beetroot powder is the perfect addition to any breakfast and its vibrant colour means this protein Overnight Oats recipe looks as good as it tastes. Give it a try!


Overnight Oats Ingredients


50g Super Berry Overnight Oats


100ml plant-based milk


100g fresh rhubarb


150g coconut/soya yoghurt


2tbsp maple/agave syrup


1tsp beetroot/blueberry powder, optional


Overnight Oats Method



  1. Add the rhubarb, agave syrup and 2 tablespoons of water to a saucepan over low heat.

  2. Bring to a simmer and cook until the rhubarb has broken apart and thick sauce has formed. Cool completely in the fridge.

  3. Add 50 to 100ml plant-based milk of your choice and beetroot/blueberry powder, then stir. Place in the fridge to rest overnight.

  4. In the morning, layer the oat mix into a jar. Next add coconut yogurt and repeat. Enjoy!
