Spice up lockdown lunchtimes with this healthy and fresh protein courgetti recipe! Each serving provides 10g protein, perfect if you nailed last night's home HIIT circuit and are in need of some repair and recovery.

Protein Courgetti Ingredients

For the walnut crumbles 

2 tbsp Pea Protein Classic Vanilla 

50g walnuts

30g flax meal/flax seeds

2tbsp coconut sugar/natural sweetener

For the courgetti

1 medium courgette

1/2 cup apple sauce

1tbsp almond flakes

Protein Courgetti Method

1. Place the flax meal, walnuts, protein powder, and sweetener in a food processor. Pulse for 30 seconds, make sure that they are ground evenly.
2. Run the courgette through the spiraliser.
3. Place courgetti in a bowl and sprinkle the ground walnut mix on top. Then drizzle on the apple sauce and almond flakes over top. Enjoy!
