Coconut Jam Balls

Szabina recently teamed up with Coconut Merchant to bring you another delicious, easy to make recipe.  

In this blog post she lists how to make these coconut jam balls which are really quick and simple to make.

Ingredients:

50g Coconut Merchant Coconut Flour

1 scoop of Nutristrength Pea Protein Vanilla

1 egg

20g coconut oil, melted

50 -100g plant based yoghurt *

Filling:

Organic Coconut Jam or Coconut & Cacao Spread, chilled Topping (optional)

Coconut Merchant Organic Coconut Honey

 

*The right amount of yoghurt depends on the product you're going to use. ... It should be thick enough to hold its shape.

 

Method:

Place all ingredients in a bowl and mix until the mixture holds together when pressed between your fingers.

Scoop out 1 tablespoon of coconut jam from the chilled jar and roll it into a ball. Take a little of your cake mixture, flatten it out and pop a piece of coconut jam ball in the middle then shape into a ball again.

Repeat with remaining mixture. Gently place into a greased baking tray.

Bake for about 15 - 20 minutes, until all sides are golden brown.

Drizzle with coconut honey.
