Bruschetta with protein tomato spread
Italy has been a popular holiday destination this year (2022). Try this fresh Italian classic in the comfort of your own home, with a protein kick of course!
Bruschetta Ingredients
- 1 tbsp Olive Oil
- 1 clove of garlic minced
- 1 cup Red Grape Tomatoes, Halved Lengthwise
- 1 cup Yellow & Green Grape Tomatoes, Halved Lengthwise
- 1 Tablespoon Balsamic Vinegar
- 1/2 Basil Leaves
- Salt And Pepper To Taste
- 1 small rye bread or baguette
Instructions
- In a small skillet, heat olive oil over medium-high heat
- Add garlic, tomatoes, balsamic, basil, salt, and pepper to the pan
- Toss to combine
- Cook for 2-3 minutes
- Set aside.
- Cut the rye bread into slices; grill the bread on both sides
Protein Tomato Spread Ingredients
- 1 scoop Pea Protein Unflavoured
- 2 tbsp olive oil
- 1 cup Cherry Tomatoes
- 1 small Red Bell Pepper
- ½ cup basil leaves
- 100ml coconut cream
- 200g Greek yoghurt
- 2 cloves of garlic
- Salt and pepper
Spread method
- In a food processor, pulse together tomatoes, basil, garlic, bell pepper, olive oil, yoghurt, coconut cream and protein powder
- Season it with salt and ground pepper (to your taste)
- Spread the cream over the toasted bread. Spoon the tomato mixture on the top
The spread will keep in the refrigerator for 1 week
