Bruschetta with protein tomato spread

Italy has been a popular holiday destination this year (2022). Try this fresh Italian classic in the comfort of your own home, with a protein kick of course!

Bruschetta Ingredients

  • 1 tbsp Olive Oil
  • 1 clove of garlic minced
  • 1 cup Red Grape Tomatoes, Halved Lengthwise
  • 1 cup Yellow & Green Grape Tomatoes, Halved Lengthwise
  • 1 Tablespoon Balsamic Vinegar
  • 1/2 Basil Leaves
  • Salt And Pepper To Taste
  • 1 small rye bread or baguette


  • In a small skillet, heat olive oil over medium-high heat
  • Add garlic, tomatoes, balsamic, basil, salt, and pepper to the pan
  • Toss to combine
  • Cook for 2-3 minutes
  • Set aside.
  • Cut the rye bread into slices; grill the bread on both sides

Protein Tomato Spread Ingredients

  • 1 scoop Pea Protein Unflavoured
  • 2 tbsp olive oil
  • 1 cup Cherry Tomatoes
  • 1 small Red Bell Pepper
  • ½ cup basil leaves
  • 100ml coconut cream
  • 200g Greek yoghurt
  • 2 cloves of garlic
  • Salt and pepper

Spread method

  • In a food processor, pulse together tomatoes, basil, garlic, bell pepper, olive oil, yoghurt, coconut cream and protein powder
  • Season it with salt and ground pepper (to your taste)
  • Spread the cream over the toasted bread. Spoon the tomato mixture on the top

The spread will keep in the refrigerator for 1 week
