Mixed Berry Pecan and Cranberry Protein Granola

Our latest pea protein recipe comes from vegan recipe blogger Nourishing Amy. Creating tasty recipes and conjuring up plant-based alternatives to dairy and animal-based ingredients, Amy is passionate about food and veganism.

This latest recipe uses our all-new Pea Protein Mixed Strawberry. The real strawberries that make up the strawberry flavour can be seen in powder itself with a soft pink hue and a taste that’s natural and delicious. This makes it perfect for cooking with, just like this Mixed Berry and Cranberry Protein Granola

Start your morning with a breakfast cereal where you know exactly what’s in it. Serve with either a plant-based milk or yoghurt and feel fuller for longer with the added protein.

Protein Granola Ingredients

Makes 1 jar (about 600g)

150g oats

30g quinoa puffs

1 scoop Pea Protein Mixed Strawberry

100g pecans, chopped

1 banana, mashed

80g coconut oil, melted

100g dried cranberries

Protein Granola Method

  1. Preheat the oven to 160°C Fan/180°C and line a large baking tray with parchment paper.

  2. Stir together the oats, quinoa puffs, Mixed Strawberry Pea Protein and roughly chopped pecans.

  3. Pour over the mashed banana and melted coconut oil and stir until sticky and combined. Transfer to the baking tray.

  4. Bake for 25 minutes, stirring through every 10 minutes. Allow to cool fully on a wire rack. Stir through the dried cranberries once cool and store in an airtight container.

Serve with milk or yoghurt and berries.

Give it a go and let us know what you think! The strawberry protein powder and cranberries pair so well and give just the right amount of sweetness. Be sure to tag us in your photos with Nourishing Amy and Nutristrength.
