Get yourself in the festive mood with this vegan and gluten-free Apple and Cinnamon Crunchy Nut bowl. Perfect for breakfast or as a snack it’s so fluffy, sweet and creamy, you’ll want it every day!

Protein Bowl Ingredients

For the apple cream:

¾ scoop Pea Protein Classic Vanilla or Whey Protein Classic Vanilla

1 can full-fat coconut milk

1 tsp cinnamon

2 tsp gingerbread mix spices*

3tbsp agave syrup

½ tsp xanthan gum

1 tbsp almond butter

200g organic apple puree

 

* Make your own gingerbread spices: 2 tbsp ground cinnamon, 2 tbsp ground ginger, 2 tbsp ground allspice, 1 tbsp ground nutmeg, 1/2 tbsp ground cloves, Pinch ground black pepper Shake all the ingredients together in a jar with a lid.

For the crunchy toppings:

2 handful almonds

2 handful walnuts

½ tbsp Nutristrength Coconut Oil

½ tbsp coconut sugar

 

For the apple chia seed toppings:

1 medium apple

1tsp vanilla powder

100ml water

2tbsp chia seeds

1 tsp cinnamon

1tbsp agave syrup

Method

For the apple cream:

First of all, you need a chilled, tinned coconut milk. It must be full fat. Open the tin, scrape the coconut cream straight into a food processor bowl, leaving the water at the bottom. Whip the cream and add all the remaining ingredients. And mix again on low speed until light and fluffy. Place into the fridge.  

 

For the crunchy toppings:

Heat half tbsp of coconut oil in a skillet. Place almond and walnuts in the bowl of food processor and pulse 10-15 seconds. (Leaving them chunky) Heat nuts in a skillet over medium heat for 2-3 minutes with half tbsp of coconut sugar until they are golden brown. Remove from the pan to cool.

 

For the apple chia seed topping:

Sauté apples in 1 tablespoon of water about 3 minutes and add in cinnamon, vanilla, chia seeds, remaining water, agave syrup. Cook until just softened, thick and the apple cubes are covered by chia seed.

 

To assemble:
